EaterLA’s Essential Tacos of Summer 2019 list:
No individual has worked harder than chef Carlos Salgado in the fight to preserve Mexican culture, namely, the traditional corn tortilla. A great way to enjoy one of Salgado’s non-GMO heirloom corn tortillas made with the blue cónico varietal is by ordering the smoked sturgeon taco with a salsa of toasted chiles and peanuts in vegetable oil. It’s an Alta California take on a Guerreran pescadilla (fish quesadilla) using local ingredients that’s a tribute to the Salgado family heritage.

Street food at its finest! I take all my out of town visitors here! Keep in mind they have multiple locations so there may be a location more convenient for you.

The secrets of flavorful shrimp are tucked into a corn tortilla then further obscured by the frenetic blistering of hot fat cooled by a frothy tomato salsa and a slice of avocado. Los Angeles hides its treasures in plain sight, under the fleeting shade doled out by rows of iconic fan palms, but on East Olympic Blvd it’s the taco dorado de camarón from San Juan de Los Lagos that is an indelible image.
